The new menu reveals the chef William Lackey’s eclectic New American style such as Butter Poached Lobster Wellington with Chervil Wild Mushroom Duxelle, Melted Leeks and Meyer Lemon Agar; his Cedar Grilled Halibut with Organic Red Beet Puree and Tangerine Powder; Pan Roasted Dry Aged Angus Tenderloin with Crispy Young Fennel and Pinot Noir Air Accompanied with Sweet Potato Pumpkin Hash and Parsnip Wrapped Asparagus; and his Trilogy of Chocolate which includes Bittersweet Chocolate Mousse S’mores with Amaretto Marshmallow,  Milk Chocolate Petit Four with Hazelnut Gianduja and Chilled White Chocolate Soup with Espresso Foam.  No need to sail off after dinner 24 luxurious rooms are available to overnight guests.
